Wednesday, August 11th, 2010For those of you who know me, you know I really never much cared for cooking. That’s why I married Tom! :-) He has been the cook in our family for almost 10 years now. Well, last week I finally decided it was time for me to start cooking dinner. It gives Tom more time with the girls when he gets home from work.
I’ve made a beef/vegetable stir fry; pulled pork (from the store) and corn on the cob; salmon with steamed spinach and couscous; my grandma’s hot chicken casserole; and black bean chilaquiles.
I would say the black bean chilaquiles was the biggest hit so far. Of course, Colleen will eat anything that has vegetables in it! I’m starting to feel a little more comfortable.
I think it will also be easier when Colleen starts going to “preschool” in the fall three days a week, so I don’t feel like I’m taking time away from her and Bea when I’m planning dinner and then she can help me make it when she gets home. I can do the planning/prep while Bea takes her nap and Colleen is at preschool.
